Part of the brand Relais & Châteaux since its renovation by interior designer Madhavi in 2009, the vintage style 5 star hotel of 26 rooms and 14 suites overlooking the Mediterranean, the Monte-Carlo Beach offers a world premiere, unique 100% organic venue: now part of an elite group of great French and Monegasque restaurants thanks to the talent and creativity of executive chef Paolo Sari.

Danièle Garcelon, Executive Director, has put all her energy into the revival of “Beach goes Bio” together with Paolo Sari, who introduced an innovative, avant-garde culinary style, and an impeccable biological vision, well adapted to the Société des Bains de Mer values and customers requirements.
In two years as head of the property kitchens, Paolo Sari, the 45 year old Venetian chef has achieved an unusual and exceptional career launching the concept ” Beach goes Bio ” in 2012, while obtaining the level 3 ECOCERT label and managing 75 cooks in 5 Monte Carlo Beach restaurants (Elsa, the Deck, La Vigie, Cabanas, the Sea Lounge). This is also a reward shared with the chef and his team, including the entire Monte-Carlo Beach Relais & Châteaux staff.
