From December 20th until the end of the month of February 2014, gourmet restaurant Le Vistamar at Hotel Hermitage Monte-Carlo will host new creations every night, designed by Michelin-starred Chef Joel Garault, for an exception menu 100% truffle.
An osmosis of tasting and celebration of one of gastronomy’s most valuable products, this ephemeral and unique menu offers 6 dishes and as many variations between land and sea. The essential parsnip velouté, scampi fried in truffle breadcrumbs, Kale Ballotin with oysters and black diamond will thus reveal all the truffle flavours and will delight the taste buds of even the most discerning gourmet. A stage celebrating refinement and quality of fish, Le Vistamar hold a true culinary identity, which gives birth today to new inspirations, combining the chef’s expertise and the quality of the truffle. Joël Garault sublimates and celebrates the finest products from both land and sea with passion, while navigating through the seasons.
